「醣」和「糖」都是「碳水化合物」,「醣」是所有糖類的總稱,它吃起來不一定是甜的,而「糖」是指單糖和雙糖,它們吃起來皆有甜味。
「醣」 - 人體每天大約60%所吸收的熱量皆來自包含醣的食物,如穀類、水果和蔬菜。「糖」(free sugars游離糖) - 則進食越少越好,根據世界衞生組織的指引,成年人和兒童每天攝取糖的份量應限制於總熱量的10%以內,舉例說,如果一個人每日需要的總熱量為2000千卡,糖的攝取量則不應超過50克,即大約是十茶匙的糖。
「游離糖」並不是天然存在於食物或飲料中,而是由食物製造商、廚師或消費者添加的。攝取足夠的「醣」能使身體機能運作、生命延續,所以要正常吃;但攝取過量的「糖」會導致身體肥胖、蛀牙和糖尿病,因此需要節制。
